Description

A refreshing salad bursting with the vibrant flavors of ripe mangoes, crunchy vegetables, and a zesty dressing.


Ingredients

  • 2 ripe mangoes, diced
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 1 carrot, grated
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce (or soy sauce for a vegetarian twist)
  • 1 tablespoon honey (or agave syrup)
  • 1/4 teaspoon chili flakes (optional)


Instructions

  1. Combine the diced mangoes, sliced red bell pepper, julienned cucumber, grated carrot, thinly sliced red onion, and chopped cilantro in a large mixing bowl.
  2. Whisk together lime juice, fish sauce (or soy sauce), honey, and chili flakes in a small bowl.
  3. Pour the dressing over the salad mix and gently toss to coat.
  4. Adjust seasoning with more lime, honey, or chili flakes to taste.
  5. Serve immediately in bowls and enjoy!
