A refreshing salad combining grilled corn and crunchy cucumbers in a creamy dressing, perfect for summer gatherings.
Ingredients

- 2 ears of corn
- 1 large cucumber
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt
- 1 tablespoon mayonnaise
- 1 clove garlic, minced
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
Instructions
- Preheat your grill to medium-high heat and shuck the corn.
- Grill the corn for about 10-12 minutes, turning occasionally, until charred.
- Remove the corn from the grill and let it cool slightly before slicing the kernels off the cob.
- Chop the cucumber into bite-sized pieces and add it to a mixing bowl.
- Dice the red onion and add it to the bowl along with the chopped cilantro.
- In a separate bowl, whisk together the Greek yogurt, mayonnaise, garlic, lime juice, chili powder, salt, and pepper.
- Pour the creamy dressing over the corn and veggies, and toss to combine.
- Transfer the salad to a refrigerated dish and chill for at least 30 minutes before serving.
Notes
Add diced tomatoes in summer or roasted pumpkin seeds in fall for variations. Consider black beans or grilled chicken for added protein.
