Description

A vibrant bowl of Southwest Chicken Salad, packed with flavors from grilled chicken, fresh vegetables, and a smoky chipotle-lime dressing.

Ingredients

Scale
  • 2 cups grilled chicken breast, sliced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn, either fresh or frozen
  • 4 cups romaine lettuce, chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup chipotle-lime dressing (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Start by grilling your chicken breast to perfection. Grill for about 6-7 minutes on each side until golden brown and fully cooked.
  2. Allow the chicken to rest, then slice it against the grain into bite-sized pieces.
  3. In a large mixing bowl, combine black beans, sweet corn, chopped romaine lettuce, diced avocado, and halved cherry tomatoes.
  4. Gently toss together, ensuring all ingredients are mixed well.
  5. Add the grilled chicken slices on top of the salad mixture.
  6. Drizzle the chipotle-lime dressing over the salad and toss gently to coat.
  7. Serve immediately in individual bowls or family-style.
