Description

Ingredients

  • 1 lb red potatoes, diced
  • 12 cups shredded cheddar or Colby Jack cheese
  • 1 cup chopped lettuce or mixed greens
  • 1 small onion, diced
  • 12 tablespoons olive oil
  • Salt and black pepper, to taste
  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 1 tablespoon yellow or Dijon mustard
  • ½ teaspoon Cajun seasoning (adjust to taste)
  • Pickles, for garnish
  • Extra lettuce
  • Fresh parsley, for garnish


Instructions

  1. Prep the Base: Toss diced potatoes in olive oil, salt, and pepper. Preheat the air fryer or oven to 400°F and cook for 16–18 minutes until crispy.
  2. Caramelize the Onions: In a skillet, heat olive oil and cook diced onions over medium-low heat for 10–15 minutes until golden brown.
  3. Cook the Beef: In the same skillet, cook ground beef over medium-high heat for 5–7 minutes, breaking it up and seasoning with salt and pepper.
  4. Make the Sauce: In a mixing bowl, whisk together mayonnaise, ketchup, mustard, and Cajun seasoning until smooth.
  5. Assemble the Bowls: Layer crispy potatoes, browned beef, caramelized onions, and shredded cheese in bowls. Drizzle with sauce and top with lettuce and pickles.
