- 1 lb red potatoes, diced
- 1–2 cups shredded cheddar or Colby Jack cheese
- 1 cup chopped lettuce or mixed greens
- 1 small onion, diced
- 1–2 tablespoons olive oil
- Salt and black pepper, to taste
- ½ cup mayonnaise
- ¼ cup ketchup
- 1 tablespoon yellow or Dijon mustard
- ½ teaspoon Cajun seasoning (adjust to taste)
- Pickles, for garnish
- Extra lettuce
- Fresh parsley, for garnish
Instructions
- Prep the Base: Toss diced potatoes in olive oil, salt, and pepper. Preheat the air fryer or oven to 400°F and cook for 16–18 minutes until crispy.
- Caramelize the Onions: In a skillet, heat olive oil and cook diced onions over medium-low heat for 10–15 minutes until golden brown.
- Cook the Beef: In the same skillet, cook ground beef over medium-high heat for 5–7 minutes, breaking it up and seasoning with salt and pepper.
- Make the Sauce: In a mixing bowl, whisk together mayonnaise, ketchup, mustard, and Cajun seasoning until smooth.
- Assemble the Bowls: Layer crispy potatoes, browned beef, caramelized onions, and shredded cheese in bowls. Drizzle with sauce and top with lettuce and pickles.
