Description

A vibrant salad combining quinoa, charred corn, fresh veggies, and a zesty lime dressing, perfect for any gathering.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Rinse the quinoa under cold water in a fine mesh strainer.
  2. Combine the quinoa with water in a medium pot and bring to a boil.
  3. Reduce heat to low, cover the pot, and let simmer for about 15 minutes.
  4. Heat a skillet over medium heat and add the corn, cooking for 5-7 minutes.
  5. In a large mixing bowl, combine the quinoa, charred corn, bell pepper, red onion, diced avocado, and cilantro.
  6. Whisk together lime juice, olive oil, salt, and pepper in a small bowl.
  7. Drizzle the dressing over the salad mix and gently toss to combine.
