  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups diced potatoes
  • 2 tablespoons olive oil (for potatoes)
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil (for salad)
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, dried oregano, salt, and pepper. Knead gently until well incorporated.
  2. Form the mixture into plump meatballs and arrange them on a baking sheet.
  3. Roast the meatballs in the oven for about 20 to 25 minutes.
  4. Toss the diced potatoes with olive oil, salt, and pepper, then spread them on another baking sheet.
  5. Roast the potatoes in the oven until crispy and golden, about the same time as the meatballs.
  6. Combine the diced cucumber, tomatoes, and red onion in a bowl, adding crumbled feta cheese. Drizzle with olive oil and red wine vinegar, then season with salt and pepper.
  7. Assemble your bowl with a serving of crispy potatoes, nestle the meatballs on top, and add the fresh salad on the side.
