Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 375°F.
  2. In one shallow dish, mix together the bread crumbs, half of the grated Parmesan, and Italian seasoning.
  3. In a second dish, whisk together the eggs and milk.
  4. In a third dish, pour the all-purpose flour.
  5. Coat each chicken breast in flour, shake off excess.
  6. Dip the chicken in the egg mixture, then roll in the breadcrumb mixture.
  7. Heat olive oil in a skillet over medium-high heat.
  8. Sear the breaded chicken for 3-4 minutes on each side until golden brown.
  9. Transfer chicken to a baking dish.
  10. In a bowl, combine the remaining Parmesan, shredded mozzarella, and minced garlic; sprinkle over chicken.
  11. Bake in the oven for 20-25 minutes until cooked through and cheese is melted.
  12. Serve with a fresh salad or roasted vegetables.
