- 4 boneless, skinless chicken breasts
- 1 cup bread crumbs
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F.
- In one shallow dish, mix together the bread crumbs, half of the grated Parmesan, and Italian seasoning.
- In a second dish, whisk together the eggs and milk.
- In a third dish, pour the all-purpose flour.
- Coat each chicken breast in flour, shake off excess.
- Dip the chicken in the egg mixture, then roll in the breadcrumb mixture.
- Heat olive oil in a skillet over medium-high heat.
- Sear the breaded chicken for 3-4 minutes on each side until golden brown.
- Transfer chicken to a baking dish.
- In a bowl, combine the remaining Parmesan, shredded mozzarella, and minced garlic; sprinkle over chicken.
- Bake in the oven for 20-25 minutes until cooked through and cheese is melted.
- Serve with a fresh salad or roasted vegetables.
