Description

A comforting dish of tender beef braised with aromatic lemongrass and creamy coconut milk, perfect for any gathering.


Ingredients

  • 2 lbs beef, cut into chunks
  • 1 can (13.5 oz) coconut milk
  • 2 stalks lemongrass, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 thumb-sized piece of ginger, grated
  • 8 oz mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onion, minced garlic, and grated ginger; sauté until onions are translucent.
  3. Brown the beef chunks on all sides in the pot.
  4. Stir in chopped lemongrass, soy sauce, and brown sugar.
  5. Pour in the coconut milk; stir gently to combine.
  6. Cover and let the beef braise slowly for 90 to 120 minutes.
  7. Add sliced mushrooms 30 minutes before serving.
  8. Season with salt and pepper before serving.
  9. Serve hot in wide bowls, garnished with fresh cilantro.
