- 1 can (13.5 oz) coconut milk
- 2 stalks lemongrass, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 thumb-sized piece of ginger, grated
- 8 oz mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add chopped onion, minced garlic, and grated ginger; sauté until onions are translucent.
- Brown the beef chunks on all sides in the pot.
- Stir in chopped lemongrass, soy sauce, and brown sugar.
- Pour in the coconut milk; stir gently to combine.
- Cover and let the beef braise slowly for 90 to 120 minutes.
- Add sliced mushrooms 30 minutes before serving.
- Season with salt and pepper before serving.
- Serve hot in wide bowls, garnished with fresh cilantro.
