Description

Delightful squares of lemon bars with a buttery crumbly topping and creamy filling, perfect for sharing and savoring.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 10 tablespoons unsalted butter, melted
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 2 tablespoons sour cream (or plain yogurt)
  • 1 large egg yolk
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon finely grated lemon zest


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Whisk together the flour, oats, salt, and baking soda in one bowl.
  3. Combine in another bowl the melted butter, light brown sugar, and vanilla extract, stirring until smooth.
  4. Mix the wet and dry ingredients together until just incorporated, reserving 3/4 cup for the topping.
  5. Press the remaining mixture into the prepared pan and bake for about 10 minutes until lightly golden.
  6. Whisk together the sweetened condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and vanilla extract to create the filling.
  7. Pour the filling over the baked crust and sprinkle reserved crumbs on top.
  8. Bake for another 17-20 minutes until the top is golden brown and the filling is set.
  9. Cool completely in the pan before lifting out and slicing into squares.
  10. Serve dusted with powdered sugar for added elegance.

Notes

These bars can also be enhanced with berries, nuts, herbs, or a chocolate drizzle for variations.
