Ingredients

- 2 chicken breasts
- 2 cups cooked rice or quinoa
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/2 cup Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried dill
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Marinate the chicken by drizzling olive oil over it and sprinkling salt, pepper, and herbs. Let it sit for at least 30 minutes.
- Grill the chicken over medium heat for about 6-7 minutes per side until golden brown. Let it rest.
- Prepare the tzatziki by mixing Greek yogurt, garlic, lemon juice, and dill. Season with salt and pepper.
- Slice the rested chicken into pieces.
- Assemble the bowls starting with rice or quinoa, then add chicken, cucumber, bell peppers, tomatoes, red onion, feta, and olives.
- Drizzle the tzatziki sauce over the assembled bowls and enjoy!
