Description

A vibrant dish of grilled chicken, fresh vegetables, and creamy tzatziki, inspired by Mediterranean flavors.


Ingredients

  • 2 chicken breasts
  • 2 cups cooked rice or quinoa
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/2 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • Olive oil for grilling


Instructions

  1. Marinate the chicken by drizzling olive oil over it and sprinkling salt, pepper, and herbs. Let it sit for at least 30 minutes.
  2. Grill the chicken over medium heat for about 6-7 minutes per side until golden brown. Let it rest.
  3. Prepare the tzatziki by mixing Greek yogurt, garlic, lemon juice, and dill. Season with salt and pepper.
  4. Slice the rested chicken into pieces.
  5. Assemble the bowls starting with rice or quinoa, then add chicken, cucumber, bell peppers, tomatoes, red onion, feta, and olives.
  6. Drizzle the tzatziki sauce over the assembled bowls and enjoy!
