Description

A refreshing and vibrant salad that combines crisp cucumbers, creamy mozzarella, and juicy cherry tomatoes, drizzled with olive oil and balsamic vinegar.


Ingredients

  • 2 large cucumbers
  • 8 ounces of fresh mozzarella cheese
  • 1 pint of cherry tomatoes
  • 1 cup of fresh basil leaves
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. Prep the cucumbers, cherry tomatoes, and mozzarella by slicing them into bite-sized pieces.
  2. Place the sliced cucumbers, mozzarella, and cherry tomatoes into a large mixing bowl.
  3. Toss in fresh basil leaves.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Season with salt and pepper.
  6. Toss gently to combine.
  7. Serve chilled or at room temperature.

Feel free to add roasted bell peppers, mint, or grilled chicken for more variation.
