- 1 cup unsalted Butter (226g), plus extra for greasing
- 2 ½ cups all-purpose Flour (310g), spooned and leveled
- 1 teaspoon Baking Soda
- ¾ teaspoon Salt (or ½ teaspoon if using salted pistachios)
- ¾ cup Light Brown Sugar (165g), packed
- ½ cup Granulated Sugar (100g)
- ½ cup Honey (170g)
- 2 Large Eggs, at room temperature
- 2 teaspoons Pure Vanilla Extract
- 1 ½ cups Shelled Pistachios (210g), roughly chopped (reserve ¼ cup for topping)
- Flaky Sea Salt for sprinkling (optional)
Instructions
- Begin by melting the butter in a skillet over medium heat until golden brown and aromatic.
- Remove from heat and pour into a large bowl, allowing to cool for 15-20 minutes.
- Grease a baking pan and line with parchment paper, leaving an overhang.
- Beat the cooled brown butter with both sugars until well combined.
- Add the eggs one at a time, mixing thoroughly after each.
- Fold in flour, baking soda, and salt until no dry streaks remain.
- Gently incorporate the chopped pistachios.
- Press the dough into the prepared pan; sprinkle reserved pistachios and sea salt on top if desired.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until edges are golden.
- Cool completely in the pan for 2-3 hours before lifting out and slicing.
Notes
Cool completely before slicing for the best texture. Optionally top with additional flavors like chocolate chips or dried fruits.
