Description

Delightful cookie bars infused with brown butter, honey, and crunchy pistachios, perfect for gatherings and cozy treats.


Ingredients

  • 1 cup unsalted Butter (226g), plus extra for greasing
  • 2 ½ cups all-purpose Flour (310g), spooned and leveled
  • 1 teaspoon Baking Soda
  • ¾ teaspoon Salt (or ½ teaspoon if using salted pistachios)
  • ¾ cup Light Brown Sugar (165g), packed
  • ½ cup Granulated Sugar (100g)
  • ½ cup Honey (170g)
  • 2 Large Eggs, at room temperature
  • 2 teaspoons Pure Vanilla Extract
  • 1 ½ cups Shelled Pistachios (210g), roughly chopped (reserve ¼ cup for topping)
  • Flaky Sea Salt for sprinkling (optional)


Instructions

  1. Begin by melting the butter in a skillet over medium heat until golden brown and aromatic.
  2. Remove from heat and pour into a large bowl, allowing to cool for 15-20 minutes.
  3. Grease a baking pan and line with parchment paper, leaving an overhang.
  4. Beat the cooled brown butter with both sugars until well combined.
  5. Add the eggs one at a time, mixing thoroughly after each.
  6. Fold in flour, baking soda, and salt until no dry streaks remain.
  7. Gently incorporate the chopped pistachios.
  8. Press the dough into the prepared pan; sprinkle reserved pistachios and sea salt on top if desired.
  9. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until edges are golden.
  10. Cool completely in the pan for 2-3 hours before lifting out and slicing.

Notes

Cool completely before slicing for the best texture. Optionally top with additional flavors like chocolate chips or dried fruits.
