- 1 cup Salted Butter
- 1 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 1 Large Egg
- 1/4 cup Heavy Cream
- 1 tsp Vanilla Extract
- 2 cups All-purpose Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Semi-sweet Chocolate Chips
- 1 cup Kataifi (Shredded Phyllo Dough)
- 1/2 cup Pistachio Cream/Butter
- Chopped Pistachios (Optional, for garnishing)
Instructions
- Preheat your oven to 350°F (175°C) and line your baking pan with parchment paper.
- Melt the salted butter in a saucepan over medium heat until it turns golden brown.
- Pour the cooled brown butter into a mixing bowl, then add brown sugar and granulated sugar.
- Crack the egg into the mixture, and add heavy cream and vanilla extract; mix well.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until a thick dough forms.
- Fold in the semi-sweet chocolate chips.
- Press half of the cookie dough into the bottom of the prepared baking pan.
- Toast the kataifi in a skillet with a bit of butter until golden brown.
- Mix the toasted kataifi with pistachio cream and spread it on top of the cookie base.
- Top with the remaining cookie dough evenly over the mixture.
- Bake for 25-30 minutes until golden brown.
- Cool before slicing into squares and serve.
Notes
Optional garnishing with chopped pistachios for added crunch and flavor.
