Description

Delightful cookie bars filled with nutty brown butter, rich chocolate, and fragrant pistachios, perfect for any occasion.


Ingredients

  • 1 cup Salted Butter
  • 1 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 Large Egg
  • 1/4 cup Heavy Cream
  • 1 tsp Vanilla Extract
  • 2 cups All-purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Semi-sweet Chocolate Chips
  • 1 cup Kataifi (Shredded Phyllo Dough)
  • 1/2 cup Pistachio Cream/Butter
  • Chopped Pistachios (Optional, for garnishing)


Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking pan with parchment paper.
  2. Melt the salted butter in a saucepan over medium heat until it turns golden brown.
  3. Pour the cooled brown butter into a mixing bowl, then add brown sugar and granulated sugar.
  4. Crack the egg into the mixture, and add heavy cream and vanilla extract; mix well.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture until a thick dough forms.
  7. Fold in the semi-sweet chocolate chips.
  8. Press half of the cookie dough into the bottom of the prepared baking pan.
  9. Toast the kataifi in a skillet with a bit of butter until golden brown.
  10. Mix the toasted kataifi with pistachio cream and spread it on top of the cookie base.
  11. Top with the remaining cookie dough evenly over the mixture.
  12. Bake for 25-30 minutes until golden brown.
  13. Cool before slicing into squares and serve.

Notes

Optional garnishing with chopped pistachios for added crunch and flavor.
