- 1 Baguette
- 1 pound Pork tenderloin (or chicken or tofu)
- 1 cup Pickled carrots
- 1 cup Pickled daikon radish
- 1 Cucumber, sliced
- 1 cup Fresh cilantro
- 1-2 Sliced jalapeños
- ½ cup Mayonnaise
- 2 tablespoons Soy sauce
- Salt and pepper to taste
Instructions
- Cook the pork, chicken, or tofu according to your preference until golden-brown.
- Mix vinegar, sugar, and salt in a bowl and toss in the sliced carrots and daikon; let marinate for at least 30 minutes.
- Slice the baguette lengthwise, then toast it lightly if desired.
- Spread mayonnaise on the inside of the baguette.
- Layer in the cooked meat, pickled vegetables, cucumber slices, cilantro, and jalapeños.
- Drizzle soy sauce, season with salt and pepper, then close and slice the sandwich in half.
