- 1 cup chopped kale
- 1 cup diced butternut squash
- 1 cup sliced mushrooms
- 1/2 cup diced onion
- 4 large eggs
- 1 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the pie crust in a pie dish.
- In a skillet, heat olive oil and sauté the diced onion until fragrant.
- Add sliced mushrooms and diced butternut squash, cooking until they soften.
- Stir in chopped kale until wilted, then remove from heat.
- In a bowl, whisk together the eggs, milk, salt, and pepper until frothy.
- Spread the sautéed vegetables in the pie crust, then pour the egg mixture over it.
- Sprinkle shredded cheese on top.
- Bake in the oven for 35 to 40 minutes until set and golden brown.
- Let the quiche cool for a few minutes before slicing and serving.
