Description

A comforting winter vegetable quiche featuring kale, butternut squash, and mushrooms, all wrapped in a flaky crust.


Ingredients

  • 1 pre-made pie crust
  • 1 cup chopped kale
  • 1 cup diced butternut squash
  • 1 cup sliced mushrooms
  • 1/2 cup diced onion
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pie crust in a pie dish.
  3. In a skillet, heat olive oil and sauté the diced onion until fragrant.
  4. Add sliced mushrooms and diced butternut squash, cooking until they soften.
  5. Stir in chopped kale until wilted, then remove from heat.
  6. In a bowl, whisk together the eggs, milk, salt, and pepper until frothy.
  7. Spread the sautéed vegetables in the pie crust, then pour the egg mixture over it.
  8. Sprinkle shredded cheese on top.
  9. Bake in the oven for 35 to 40 minutes until set and golden brown.
  10. Let the quiche cool for a few minutes before slicing and serving.
