Ingredients

  • 4 cups shredded cabbage (green or purple)
  • 2 cups chopped apples (Granny Smith, Honeycrisp, or Fuji)
  • 1 cup dried cranberries
  • 1 cup Greek yogurt or mayo (or vegan mayo)
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons vinegar (apple cider or white vinegar)
  • 1/2 cup chopped walnuts or sunflower seeds
  • 1 teaspoon celery seed (optional)
  • 1 tablespoon lemon juice


Instructions

  1. Shred the cabbage into bite-sized pieces and set aside.
  2. Chop the apples, keeping the skin intact for color.
  3. In a separate bowl, whisk together Greek yogurt or mayonnaise, honey or maple syrup, vinegar, and lemon juice.
  4. Pour the dressing over the cabbage and apples and toss until coated.
  5. Add dried cranberries and chopped walnuts or sunflower seeds, tossing gently.
  6. Let the coleslaw rest in the fridge for 15-20 minutes before serving.

Notes
