- 2 cups chopped apples (Granny Smith, Honeycrisp, or Fuji)
- 1 cup dried cranberries
- 1 cup Greek yogurt or mayo (or vegan mayo)
- 2 tablespoons honey or maple syrup
- 2 tablespoons vinegar (apple cider or white vinegar)
- 1/2 cup chopped walnuts or sunflower seeds
- 1 teaspoon celery seed (optional)
- 1 tablespoon lemon juice
Instructions
- Shred the cabbage into bite-sized pieces and set aside.
- Chop the apples, keeping the skin intact for color.
- In a separate bowl, whisk together Greek yogurt or mayonnaise, honey or maple syrup, vinegar, and lemon juice.
- Pour the dressing over the cabbage and apples and toss until coated.
- Add dried cranberries and chopped walnuts or sunflower seeds, tossing gently.
- Let the coleslaw rest in the fridge for 15-20 minutes before serving.
Notes
