- 4 large sweet potatoes, peeled and sliced
- 2 cups fresh or frozen cranberries
- 1 1/2 cups Gruyère cheese, shredded
- 1 cup heavy cream
- 1 cup breadcrumbs
- 2 tablespoons butter, melted
- Salt and pepper to taste
- 1 teaspoon thyme (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Layer half of the sweet potato slices in a greased baking dish.
- Sprinkle half of the cranberries and half of the Gruyère cheese over the potatoes.
- Add the remaining sweet potato slices, followed by the remaining cranberries and Gruyère.
- Pour the heavy cream over the layered ingredients, seasoning with salt and pepper.
- Mix breadcrumbs with melted butter and sprinkle over the top.
- Bake for about 45 minutes until golden brown and bubbly.
- Allow to cool for a few minutes before serving.
Notes
