Instructions
- Preheat your oven to 400°F (200°C). Scrub the sweet potatoes, prick them with a fork, and bake for 45-60 minutes until tender.
- Melt butter in a skillet over medium heat, add diced apples, sprinkle with cinnamon and nutmeg, and cook until apples are tender, about 5-7 minutes.
- Remove sweet potatoes from the oven, slice in half, scoop out some flesh, and mix it with the apple filling.
- Spoon the apple mixture back into the sweet potato halves and drizzle with maple syrup.
