Description
This strawberry earthquake cake is gooey, creamy, fruity, and impossible to resist. With a box of strawberry cake mix, cream cheese swirls, and white chocolate chips, it’s a foolproof dessert that’s perfect for any gathering.
Ingredients
1 box strawberry cake mix (plus eggs, oil, and water as directed)
8 oz cream cheese, softened
1/2 cup unsalted butter, melted
2 cups powdered sugar
1 cup white chocolate chips
1 cup diced fresh strawberries (optional)
Instructions
1. Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking pan.
2. Prepare the strawberry cake batter as instructed on the box and pour into the prepared pan.
3. In a separate bowl, combine softened cream cheese, melted butter, and powdered sugar. Mix until smooth.
4. Drop spoonfuls of the cream cheese mixture on top of the cake batter. Swirl gently with a knife.
5. Sprinkle white chocolate chips and optional diced strawberries evenly over the top.
6. Bake for 35–40 minutes until the edges are set and the center is mostly firm with a slight jiggle.
7. Let cool for at least 15 minutes before slicing. Serve warm or at room temperature.
Notes
This cake can be made a day ahead and stored in the fridge.
To reheat, microwave individual slices for 10–15 seconds.
Try adding raspberry preserves or swapping white chocolate for dark.
Serve with whipped cream or ice cream for extra indulgence.
