  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)


Instructions

  1. In a medium bowl, whisk together honey, soy sauce, rice vinegar, garlic, ginger, sesame oil, black pepper, and red pepper flakes until well blended.
  2. Place chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, up to 2 hours.
  3. Heat vegetable oil in a skillet over medium-high heat. Add the marinated chicken in a single layer and sear for 5-7 minutes until golden brown. Flip and cook for another 5-7 minutes until cooked through (internal temperature of 165°F or 75°C).
  4. Remove chicken and cover with aluminum foil. For the sauce, pour the reserved marinade into the skillet and bring to a gentle boil.
  5. Mix cornstarch and water in a small bowl until smooth. Gradually add to the boiling marinade, stirring constantly until thickened (about 2-3 minutes).
  6. Return chicken to the skillet, coat with sauce, and cook for an additional 1-2 minutes to heat through.
  7. Transfer to a serving platter and garnish with green onions and sesame seeds before serving.
