Ingredients

  • 1/2 pound ground beef
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1 cup broccoli florets
  • 1/2 red bell pepper, sliced into strips
  • 1/2 zucchini, sliced
  • 1/2 cup mushrooms, sliced
  • 2 cloves garlic, minced (for the vegetables)
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce (for the vegetables)
  • 1 cup steamed white rice


Instructions

  1. Prep all vegetables: wash, chop, and measure.
  2. In a large skillet, heat sesame oil over medium-high heat. Add minced garlic and sauté for 30 seconds.
  3. Add ground beef, breaking it apart, and cook until browned. Stir in soy sauce, chili flakes, and brown sugar, simmer for 3-4 minutes.
  4. In a separate pan, heat olive oil and add more minced garlic. Cook for 30 seconds.
  5. Add sliced mushrooms, cook for 2 minutes, then add broccoli, zucchini, and red bell pepper. Stir-fry for 4-5 minutes until tender-crisp.
  6. Assemble the bowl: place rice in bowls, top with ground beef, and arrange vegetables. Drizzle remaining sauce over top.

Notes

Feel free to substitute ground turkey or tofu for the beef. Try quinoa or brown rice for a healthier option.
