- 2 pounds beef stew meat, cut into 1-inch cubes
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 pounds baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 3 tablespoons olive oil
- 5 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, combine beef cubes with Worcestershire sauce, Italian seasoning, smoked paprika, salt, and black pepper. Toss to coat.
- Arrange halved baby potatoes in the bottom of the slow cooker and drizzle with half of the melted butter and olive oil.
- Sprinkle minced garlic over the potatoes.
- Layer the seasoned beef cubes over the potatoes and drizzle with remaining butter and olive oil.
- Cover the slow cooker and set it to low for 6 to 7 hours or high for 3 to 4 hours.
- When finished cooking, stir the beef and potatoes to combine and garnish with fresh parsley before serving.
Notes
Feel free to add seasonal vegetables or experiment with different proteins or herbs to customize the dish to your taste.
