Ingredients

  • 2 cups fresh cranberries
  • 1 cup balsamic vinegar
  • 1 cup beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat.
  3. Season the roast with salt and pepper, then sear on all sides until browned.
  4. Remove the roast and set aside.
  5. Add chopped onion and minced garlic to the pot, sautéing until translucent.
  6. Add fresh cranberries, balsamic vinegar, and beef broth, stirring to combine.
  7. Sprinkle in dried thyme and bay leaf.
  8. Return the roast to the pot, cover, and braise in the oven for 3 to 4 hours.
  9. Once cooked, remove the roast, let it rest, and serve on a platter drizzled with the glaze.

Notes

Consider swapping cranberries for apples in the fall or peaches in the summer for seasonal variations. Fresh herbs can enhance flavor.
