- 2 cups fresh cranberries
- 1 cup balsamic vinegar
- 1 cup beef broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil

- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions
- Preheat the oven to 300°F (150°C).
- Heat olive oil in a large Dutch oven over medium-high heat.
- Season the roast with salt and pepper, then sear on all sides until browned.
- Remove the roast and set aside.
- Add chopped onion and minced garlic to the pot, sautéing until translucent.
- Add fresh cranberries, balsamic vinegar, and beef broth, stirring to combine.
- Sprinkle in dried thyme and bay leaf.
- Return the roast to the pot, cover, and braise in the oven for 3 to 4 hours.
- Once cooked, remove the roast, let it rest, and serve on a platter drizzled with the glaze.
Notes
Consider swapping cranberries for apples in the fall or peaches in the summer for seasonal variations. Fresh herbs can enhance flavor.
