- 2 large sweet potatoes
- 3 tablespoons olive oil
- Salt and pepper to taste
- 3 tablespoons honey
- 1 cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes. Cut them into ¼-inch thick rounds.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until they are well coated.
- Arrange the sweet potato rounds in a single layer on a baking sheet.
- Roast in the preheated oven for about 25-30 minutes, turning halfway through, until golden and tender.
- Once out of the oven, drizzle honey over the sweet potato rounds.
- Sprinkle the crumbled feta cheese on top.
- Garnish with fresh parsley before serving.
Notes
Cut the sweet potatoes evenly to ensure they cook at the same rate. Adjust honey and feta according to your taste. For a little kick, sprinkle some red pepper flakes on top before serving.
