Description

A delicious and healthy side dish or snack featuring sweet potatoes, honey, and feta cheese.


Ingredients

  • 2 large sweet potatoes
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 3 tablespoons honey
  • 1 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes. Cut them into ¼-inch thick rounds.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until they are well coated.
  4. Arrange the sweet potato rounds in a single layer on a baking sheet.
  5. Roast in the preheated oven for about 25-30 minutes, turning halfway through, until golden and tender.
  6. Once out of the oven, drizzle honey over the sweet potato rounds.
  7. Sprinkle the crumbled feta cheese on top.
  8. Garnish with fresh parsley before serving.

Notes

Cut the sweet potatoes evenly to ensure they cook at the same rate. Adjust honey and feta according to your taste. For a little kick, sprinkle some red pepper flakes on top before serving.
