Description

Ingredients

  • 1/2 cup Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper (Diced)
  • 1/4 cup Green Onions (Chopped)
  • Sesame seeds (for serving)
  • Crushed red pepper (optional)


Instructions

  1. Slice chicken into bite-sized pieces and gather all ingredients.
  2. In a mixing bowl, combine soy sauce, pineapple juice, honey, rice vinegar, cornstarch mixed with water, and whisk together.
  3. Heat oil in a large skillet over medium heat, add minced garlic and sauté until fragrant.
  4. Add chicken pieces to the skillet, sauté until cooked through and golden, about 5 to 7 minutes.
  5. Pour the prepared sauce over the chicken and bring to a simmer, allowing it to thicken.
  6. Stir in the cooked rice and pineapple chunks, mixing until well combined.
  7. Add diced red bell pepper and cook for an additional few minutes.
  8. Transfer to a serving platter and top with green onions and sesame seeds before serving.
