- 1.5 cups Cooked Rice
- 1 cup Pineapple Chunks
- 1/2 whole Red Bell Pepper (Diced)
- 1/4 cup Green Onions (Chopped)
- Sesame seeds (for serving)
- Crushed red pepper (optional)
Instructions
- Slice chicken into bite-sized pieces and gather all ingredients.
- In a mixing bowl, combine soy sauce, pineapple juice, honey, rice vinegar, cornstarch mixed with water, and whisk together.
- Heat oil in a large skillet over medium heat, add minced garlic and sauté until fragrant.
- Add chicken pieces to the skillet, sauté until cooked through and golden, about 5 to 7 minutes.
- Pour the prepared sauce over the chicken and bring to a simmer, allowing it to thicken.
- Stir in the cooked rice and pineapple chunks, mixing until well combined.
- Add diced red bell pepper and cook for an additional few minutes.
- Transfer to a serving platter and top with green onions and sesame seeds before serving.
