- 1 cup peanut butter
- 1 cup oats
- 1/2 cup honey or maple syrup
- 1/2 cup chocolate chips
- 1/2 cup ground flaxseed or chia seeds
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine peanut butter, oats, flaxseed, honey or maple syrup, and chocolate chips.
- Stir ingredients together until smooth and well combined.
- Scoop out about a tablespoon of the mixture and roll into balls approximately one inch in diameter.
- Place rolled energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to let them set.
- Store in an airtight container and enjoy as a snack anytime.
