- 4 medium carrots (about 400g), peeled and sliced
- 2 medium Honeycrisp or Fuji apples (about 300g), cored and chopped
- 3 tbsp pure maple syrup
- 2 tbsp smooth Dijon mustard
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the sliced carrots and chopped apples.
- In a separate bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Pour the glaze over the carrot and apple mixture and toss to coat.
- Spread the mixture in a single layer on the prepared baking sheet.
- Roast for about 25 to 30 minutes, stirring halfway through, until the carrots are caramelized and the apples are soft.
- Serve warm, drizzled with any remaining glaze.
Notes
