Description

A delightful side dish combining the sweetness of apples with the savory flavor of carrots, all enhanced by a maple Dijon glaze.


Ingredients

  • 4 medium carrots (about 400g), peeled and sliced
  • 2 medium Honeycrisp or Fuji apples (about 300g), cored and chopped
  • 3 tbsp pure maple syrup
  • 2 tbsp smooth Dijon mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the sliced carrots and chopped apples.
  3. In a separate bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper.
  4. Pour the glaze over the carrot and apple mixture and toss to coat.
  5. Spread the mixture in a single layer on the prepared baking sheet.
  6. Roast for about 25 to 30 minutes, stirring halfway through, until the carrots are caramelized and the apples are soft.
  7. Serve warm, drizzled with any remaining glaze.
