- 1/4 cup olive oil
- 2 tablespoons butter (melted)
- 3 cloves garlic (minced)
- 1 tablespoon Italian parsley leaves (chopped)
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1/4 teaspoon salt
- 3 dashes ground black pepper
Instructions
- Preheat your oven to 350°F (176°C).
- Cut slits into each potato without cutting all the way through.
- In a separate bowl, combine olive oil, melted butter, minced garlic, chopped parsley, lemon juice, honey, salt, and pepper.
- Brush each potato with the oil mixture, ensuring to get inside the slits.
- Place the potatoes in a roasting pan and roast for 1 hour, basting halfway through with remaining oil mixture.
- Serve immediately, garnished with fresh herbs or a drizzle of lemon juice.
