Description

Perfectly crispy on the outside and buttery soft on the inside, these Lemon Herb Roasted Potatoes are kissed with garlic and lemon, making them a delightful side for any occasion.


Ingredients

  • 1 lb (500g) baby potatoes
  • 1/4 cup olive oil
  • 2 tablespoons butter (melted)
  • 3 cloves garlic (minced)
  • 1 tablespoon Italian parsley leaves (chopped)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 3 dashes ground black pepper


Instructions

  1. Preheat your oven to 350°F (176°C).
  2. Cut slits into each potato without cutting all the way through.
  3. In a separate bowl, combine olive oil, melted butter, minced garlic, chopped parsley, lemon juice, honey, salt, and pepper.
  4. Brush each potato with the oil mixture, ensuring to get inside the slits.
  5. Place the potatoes in a roasting pan and roast for 1 hour, basting halfway through with remaining oil mixture.
  6. Serve immediately, garnished with fresh herbs or a drizzle of lemon juice.
