Description

Melt-in-your-mouth cookies filled with a creamy lemon center, perfect for the holiday season.


Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • 2 tsp lemon zest
  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1½ cups powdered sugar
  • 2 tbsp lemon juice
  • ½ tsp lemon zest
  • Pinch of salt
  • Extra powdered sugar for coating


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter with an electric mixer until creamy.
  3. Gradually add the powdered sugar and mix until fluffy.
  4. Add vanilla extract and mix to combine.
  5. Sift together the flour and salt, then fold into the butter mixture along with lemon zest until dough is soft.
  6. In a separate bowl, beat cream cheese and softened butter until creamy.
  7. Add lemon juice and lemon zest to the cream mixture and mix until well combined.
  8. Chill the filling mixture in the refrigerator for about 30 minutes.
  9. Take a tablespoon of cookie dough, flatten it, and scoop about half a teaspoon of the lemon cream filling in the center.
  10. Fold the dough over the filling and roll into a ball.
  11. Place the rolled cookies on the baking sheet and bake for 12-14 minutes or until lightly golden.
  12. Let cookies cool for 5 minutes, then roll in extra powdered sugar while still warm.
  13. Cool completely before serving, optionally rolling again in powdered sugar for extra coating.
