Ingredients

- 1 cup low-fat cottage cheese
- 1 cup fresh blueberries (plus extra for garnish)
- 1 tablespoon lemon zest (from about 1 lemon)
- 2 tablespoons honey (or maple syrup for a vegan option)
- ½ cup almond flour
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mixing bowl, combine cottage cheese, fresh blueberries, lemon zest, honey (or maple syrup), almond flour, vanilla extract, and a pinch of salt. Gently mix until just combined.
- Chill the mixture in the refrigerator for 15-20 minutes to firm it up.
- After chilling, scoop portions of the mixture and roll them into balls. Place on a parchment-lined baking sheet.
- (Optional) Preheat your oven to 325°F (160°C) and bake the bites for 8-10 minutes for a toasted touch.
- Let cool slightly and drizzle with extra honey and garnish with additional blueberries if desired.
