Description

A vibrant and comforting layered Mediterranean vegetable lasagna featuring a blend of fresh vegetables, creamy ricotta, and aromatic herbs, perfect for gatherings.


Ingredients

  • 1 large eggplant, sliced into 1/4-inch rounds
  • 2 medium zucchinis, sliced lengthwise into 1/4-inch strips
  • 1 red bell pepper, halved and seeded
  • 1 yellow bell pepper, halved and seeded
  • Olive oil, for brushing
  • Salt and pepper, to taste
  • 9 lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups marinara sauce
  • Fresh basil leaves, for garnish


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange eggplant, zucchini, and bell peppers on the sheet. Brush with olive oil and season with salt and pepper.
  2. Roast vegetables for 20 minutes, flipping halfway through.
  3. Boil salted water and cook lasagna noodles according to package instructions. Drain and set aside.
  4. In a mixing bowl, whisk ricotta cheese, garlic, oregano, basil, salt, and pepper to create the creamy filling.
  5. Spread 1/2 cup marinara sauce on the bottom of a greased baking dish. Layer with three lasagna noodles, half of the roasted vegetables, and half of the ricotta mixture. Top with mozzarella and parmesan cheese.
  6. Repeat the layering process until all ingredients are used, finishing with noodles, remaining marinara, mozzarella, and parmesan on top.
  7. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes until golden and bubbly. Let rest for 10 minutes before garnishing with fresh basil leaves.

Notes

Feel free to customize the vegetables based on the season. Add proteins such as ground turkey or lentils for a heartier dish.
