Ingredients
Scale
- 4 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon salt
- 1 tablespoon instant yeast
- 1 1/2 cups unsalted butter (cold)
- 1 1/4 cups milk (cold)
- 1 egg (for egg wash)
Instructions
- Combine dry ingredients (flour, sugar, salt, instant yeast) in a mixing bowl.
- Gradually pour in cold milk and stir until a shaggy dough forms.
- Knead the dough lightly on a floured surface and wrap it in plastic. Refrigerate for 1 hour.
- Beat the cold butter between parchment paper into a flat rectangle.
- Roll out the chilled dough to 1/2-inch thick and place the butter in the center.
- Fold the dough over the butter, sealing it well.
- Roll and fold the dough several times, chilling between folds to maintain the butter’s firmness.
- Roll out the final dough to a large rectangle and cut into triangles.
- Roll each triangle from the base to the tip, tucking the end under to shape the croissant.
- Let the shaped croissants rise until puffy, then brush with egg wash.
- Preheat oven to 400°F (200°C) and bake croissants for 15-20 minutes until golden brown.
- Allow to cool slightly before enjoying!
