Description

Delicious and versatile Hot Honey BBQ Chicken Quesadillas that combine smoky BBQ flavors with a hint of sweetness and a cheesy center.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 2 tablespoons honey
  • 1 teaspoon hot sauce (adjust to taste)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup sliced red onions
  • 1/2 cup chopped bell peppers (any color)
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Sour cream and guacamole for serving (optional)


Instructions

  1. In a medium bowl, combine shredded chicken, BBQ sauce, honey, and hot sauce. Mix until chicken is thoroughly coated.
  2. In a skillet, heat olive oil over medium heat. Add sliced onions and bell peppers, sauté until softened, about 5 minutes, and season with salt and pepper.
  3. On a flour tortilla, sprinkle cheddar and mozzarella cheese on half, add BBQ chicken mixture, sautéed vegetables, and cilantro. Fold the tortilla to create a half-moon shape.
  4. Heat another skillet over medium heat. Cook each folded quesadilla for about 3 minutes on each side until golden brown and cheese is melted.
  5. Remove from heat and let cool slightly before cutting into wedges.

Notes

Optional: Add seasonal ingredients like butternut squash or fresh corn for a twist. Experiment with different BBQ sauces for varied flavors.
