- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 2 tablespoons honey
- 1 teaspoon hot sauce (adjust to taste)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/2 cup sliced red onions
- 1/2 cup chopped bell peppers (any color)
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Sour cream and guacamole for serving (optional)
Instructions
- In a medium bowl, combine shredded chicken, BBQ sauce, honey, and hot sauce. Mix until chicken is thoroughly coated.
- In a skillet, heat olive oil over medium heat. Add sliced onions and bell peppers, sauté until softened, about 5 minutes, and season with salt and pepper.
- On a flour tortilla, sprinkle cheddar and mozzarella cheese on half, add BBQ chicken mixture, sautéed vegetables, and cilantro. Fold the tortilla to create a half-moon shape.
- Heat another skillet over medium heat. Cook each folded quesadilla for about 3 minutes on each side until golden brown and cheese is melted.
- Remove from heat and let cool slightly before cutting into wedges.
Notes
Optional: Add seasonal ingredients like butternut squash or fresh corn for a twist. Experiment with different BBQ sauces for varied flavors.
