Description

Ingredients

  • 2 cups fresh corn kernels or 1 can of corn, drained
  • 1 cup creamed corn
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 large eggs, beaten
  • Chopped chives or parsley for garnish


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the corn kernels, creamed corn, sour cream, cheddar cheese, honey, and melted butter.
  3. In a separate bowl, whisk together the cornmeal, baking powder, salt, black pepper, and garlic powder.
  4. Fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  5. Gently incorporate the beaten eggs.
  6. Grease a 9×13 inch baking dish and pour the corn mixture into it, spreading it evenly.
  7. Bake for 35-40 minutes until golden brown and a toothpick inserted comes out clean.
