- 1 cup fresh or frozen cranberries

- 1 tablespoon balsamic vinegar
- 1 cup ricotta cheese
- 1/4 cup chopped pecans (optional for added crunch)
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Season chicken breasts with salt, pepper, garlic powder, and thyme.
- In a skillet over medium-high heat, heat olive oil and sear the chicken for 2–3 minutes on each side until golden brown.
- Transfer the seared chicken to the prepared baking dish.
- In a small bowl, whisk together honey and balsamic vinegar, then pour over the chicken.
- Scatter cranberries over the chicken, followed by dollops of ricotta cheese on top.
- Bake uncovered for 25–30 minutes, adding pecans in the last 5 minutes if desired.
- Garnish with parsley and serve hot.
