  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1 cup fresh or frozen cranberries
  • 3 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 cup ricotta cheese
  • 1/4 cup chopped pecans (optional for added crunch)
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Season chicken breasts with salt, pepper, garlic powder, and thyme.
  3. In a skillet over medium-high heat, heat olive oil and sear the chicken for 2–3 minutes on each side until golden brown.
  4. Transfer the seared chicken to the prepared baking dish.
  5. In a small bowl, whisk together honey and balsamic vinegar, then pour over the chicken.
  6. Scatter cranberries over the chicken, followed by dollops of ricotta cheese on top.
  7. Bake uncovered for 25–30 minutes, adding pecans in the last 5 minutes if desired.
  8. Garnish with parsley and serve hot.
