Instructions

  2. Drizzle oil in the pan, sear chicken for about 3-4 minutes per side until golden brown, then remove from heat.
  3. Add the uncooked rice to the same pan, toasting for 1-2 minutes.
  4. Pour in chicken broth, BBQ sauce, and honey; stir to combine.
  5. Nestle the seared chicken back into the mixture, then bring it to a gentle boil.
  6. Reduce heat to low, cover, and let simmer for 15 minutes.
  7. Sprinkle mixed vegetables on top, cover, and cook for an additional 5 minutes.
  8. Let it rest for 5 minutes, fluff rice with a fork, garnish with green onions or parsley, and serve hot.
