- 2 cups granulated sugar
- 1 cup water
- ½ teaspoon vanilla extract (optional)
Instructions
- Wash and dry the lemons. Zest the lemons and juice them to obtain around one cup of juice.
- In a medium-sized pot, combine lemon juice, zest, sugar, and water. Stir gently with a whisk.
- Bring the mixture to a boil over medium-high heat, then reduce to a simmer for 30 to 40 minutes, stirring occasionally.
- Test for doneness by dropping a small amount onto a cold plate; if it holds shape, it’s ready.
- Pour the warm lemon spread into sterilized jars and seal tightly. Allow to cool at room temperature before refrigerating.
