Description

Delicious chicken rolls stuffed with creamy herbed ricotta, perfect for cozy dinners and gatherings.


Ingredients

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 1 cup Ricotta Cheese
  • 1/3 cup Grated Parmesan Cheese
  • 2 cups Fresh Spinach
  • 1/4 cup Fresh Basil
  • 1/4 cup Fresh Parsley
  • 1 teaspoon Garlic Powder
  • Salt, to taste
  • Pepper, to taste
  • 1 cup Marinara Sauce
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Crushed Red Pepper Flakes
  • Toothpicks or Kitchen Twine


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pound the chicken breasts flat between plastic wrap until about 1/2 inch thick.
  3. In a large mixing bowl, combine ricotta, parmesan, spinach, basil, parsley, garlic powder, salt, and pepper.
  4. Place a scoop of ricotta filling in the center of each chicken breast and roll tightly, securing with toothpicks or twine.
  5. Heat olive oil in a large skillet over medium heat and sear the chicken rolls for 3-4 minutes on each side until browned.
  6. Transfer the rolls to a baking dish, pour marinara sauce over them, and cover with foil.
  7. Bake for 25-30 minutes until cooked through.
  8. Let sit for a few minutes before serving.
