- 4 pieces Boneless, Skinless Chicken Breasts
- 1 cup Ricotta Cheese
- 1/3 cup Grated Parmesan Cheese
- 2 cups Fresh Spinach
- 1/4 cup Fresh Basil
- 1/4 cup Fresh Parsley
- 1 teaspoon Garlic Powder
- Salt, to taste
- Pepper, to taste
- 1 cup Marinara Sauce
- 2 tablespoons Olive Oil
- 1/2 teaspoon Crushed Red Pepper Flakes
- Toothpicks or Kitchen Twine
Instructions
- Preheat the oven to 375°F (190°C).
- Pound the chicken breasts flat between plastic wrap until about 1/2 inch thick.
- In a large mixing bowl, combine ricotta, parmesan, spinach, basil, parsley, garlic powder, salt, and pepper.
- Place a scoop of ricotta filling in the center of each chicken breast and roll tightly, securing with toothpicks or twine.
- Heat olive oil in a large skillet over medium heat and sear the chicken rolls for 3-4 minutes on each side until browned.
- Transfer the rolls to a baking dish, pour marinara sauce over them, and cover with foil.
- Bake for 25-30 minutes until cooked through.
- Let sit for a few minutes before serving.
