- 2 lbs beef chuck roast, trimmed
- 1 large onion, sliced
- 2 cups beef broth
- 1 packet brown gravy mix (about 1 oz)
- 1 tablespoon Worcestershire sauce
- 3 cups mashed potatoes, prepared
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons cornstarch (optional, for thickening)
Instructions
- Season the beef chuck roast with salt, black pepper, and garlic powder.
- Place the sliced onions at the bottom of the slow cooker.
- Put the seasoned roast on top of the onions.
- In a medium bowl, whisk together beef broth, brown gravy mix, and Worcestershire sauce until smooth.
- Pour the mixture over the beef and onions.
- Cover the slow cooker and cook on low for about 8 hours.
- Once cooked, remove the beef and shred it with forks.
- For a thicker gravy, whisk cornstarch with water and stir it into the gravy, then heat until thickened.
- Serve mashed potatoes topped with shredded beef and gravy.
