Description

Ingredients

  • 2 lbs beef chuck roast, trimmed
  • 1 large onion, sliced
  • 2 cups beef broth
  • 1 packet brown gravy mix (about 1 oz)
  • 1 tablespoon Worcestershire sauce
  • 3 cups mashed potatoes, prepared
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)


Instructions

  1. Season the beef chuck roast with salt, black pepper, and garlic powder.
  2. Place the sliced onions at the bottom of the slow cooker.
  3. Put the seasoned roast on top of the onions.
  4. In a medium bowl, whisk together beef broth, brown gravy mix, and Worcestershire sauce until smooth.
  5. Pour the mixture over the beef and onions.
  6. Cover the slow cooker and cook on low for about 8 hours.
  7. Once cooked, remove the beef and shred it with forks.
  8. For a thicker gravy, whisk cornstarch with water and stir it into the gravy, then heat until thickened.
  9. Serve mashed potatoes topped with shredded beef and gravy.
