- 1 can (15 oz) salsa verde
- 1 cup cooked brown rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken with salsa verde. Mix in the brown rice, black beans, and corn. Add cumin, garlic powder, salt, and pepper.
- Transfer the mixture into a greased 9×13 inch baking dish, smoothing it out evenly.
- Sprinkle the remaining shredded cheese over the top.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Before serving, top with fresh cilantro.
