Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) salsa verde
  • 1 cup cooked brown rice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken with salsa verde. Mix in the brown rice, black beans, and corn. Add cumin, garlic powder, salt, and pepper.
  3. Transfer the mixture into a greased 9×13 inch baking dish, smoothing it out evenly.
  4. Sprinkle the remaining shredded cheese over the top.
  5. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Before serving, top with fresh cilantro.
