Ingredients

  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted

  • 1/4 teaspoon salt
  • 1 cup fresh or frozen raspberries


Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, mix rolled oats, almond flour, coconut sugar, baking powder, and salt.
  3. In another bowl, whisk together honey or maple syrup, melted coconut oil, and vanilla extract, then combine with the dry ingredients.
  4. Fold in the raspberries.
  5. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
  6. Bake for 12-15 minutes until the edges are golden brown, then allow to cool on a wire rack.
