Description

A sweet and savory one-pan dinner that’s fast, flavorful, and family-approved. Hawaiian Chicken Sheet Pan brings tropical vibes to busy weeknights.


Ingredients

2 lbs chicken breasts, diced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small red onion, chopped

2 cups fresh pineapple chunks

1/3 cup soy sauce or teriyaki

1/4 cup BBQ sauce

2 tbsp honey or brown sugar

1 tbsp rice vinegar

2 cloves garlic, minced

1 tsp grated ginger

1/2 tsp red pepper flakes

Sesame seeds, cilantro for garnish


Instructions

1. Preheat oven to 400°F and line sheet pan with parchment.

2. Dice chicken, peppers, and onion.

3. Whisk together sauce ingredients in bowl.

4. Toss chicken and veggies in sauce.

5. Spread on pan in even layer.

6. Bake 15 minutes.

7. Add pineapple and bake 10 more minutes.

8. Broil 2–3 minutes for caramelization.

9. Serve over rice and garnish.

Notes

Swap BBQ sauce for teriyaki for a more tropical flavor.

Use canned pineapple if fresh isn’t available.

Add sriracha for extra heat.

Pairs well with coconut or cilantro lime rice.
