Ingredients

  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1 cup plain Greek yogurt


Instructions

  1. Whisk together olive oil, lemon juice, and spices in a mixing bowl.
  2. Pound chicken breasts to 1/2 inch thickness and marinate in the mixture for at least 30 minutes.
  3. Prepare tzatziki sauce by mixing Greek yogurt, grated cucumber, olive oil, lemon juice, minced garlic, and salt in another bowl.
  4. Cook rice or quinoa according to package instructions.
  5. Sauté the marinated chicken in a preheated air fryer or skillet at 380°F until golden and fully cooked (about 6-8 minutes).
