Delicious Greek Chicken Bowls made with marinated grilled chicken, fresh veggies, and creamy tzatziki sauce.

- 1 pound chicken breast
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon dried oregano
- Salt and pepper to taste
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1 cup brown rice or quinoa
- 1 cup tzatziki sauce (made from yogurt, cucumber, garlic, dill, and lemon juice)
Instructions
- In a medium bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper to create the marinade. Coat the chicken breasts and let them marinate for at least 30 minutes.
- Preheat your grill or skillet. Cook the marinated chicken for about 6-7 minutes per side until it reaches an internal temperature of 165°F. Let it rest before slicing.
- In a mixing bowl, combine yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice to prepare the tzatziki sauce. Set aside.
- Cook brown rice or quinoa according to package instructions.
- Assemble your bowls starting with a base of grains, topped with sliced chicken, diced cucumber, cherry tomatoes, red onion, feta cheese, and a dollop of tzatziki sauce. Serve immediately or store for meal prep.
