Description

A delightful cake infused with warm spices and topped with a rich cinnamon molasses frosting, perfect for festive gatherings.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup molasses
  • 1 cup boiling water


Instructions

  1. Preheat oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In another bowl, cream the butter, brown sugar, and granulated sugar until fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in molasses.
  5. Gradually combine dry ingredients with the wet mixture, alternating with boiling water until just combined.
  6. Divide batter evenly between the prepared pans and bake for 30-35 minutes until a toothpick inserted comes out clean.
  7. Cool cakes in pans for 10 minutes before transferring to wire racks.
  8. For frosting, beat together softened butter, powdered sugar, vanilla extract, molasses, and cinnamon until smooth.
  9. Once cooled, layer and frost the cakes generously with the cinnamon molasses frosting.

Notes

Consider adding orange or lemon zest for a citrus twist, or stir in chopped nuts for added richness.
