Instructions
- Preheat oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
- In another bowl, cream the butter, brown sugar, and granulated sugar until fluffy.
- Add eggs one at a time, beating well after each addition, then mix in molasses.
- Gradually combine dry ingredients with the wet mixture, alternating with boiling water until just combined.
- Divide batter evenly between the prepared pans and bake for 30-35 minutes until a toothpick inserted comes out clean.
- Cool cakes in pans for 10 minutes before transferring to wire racks.
- For frosting, beat together softened butter, powdered sugar, vanilla extract, molasses, and cinnamon until smooth.
- Once cooled, layer and frost the cakes generously with the cinnamon molasses frosting.
Notes
Consider adding orange or lemon zest for a citrus twist, or stir in chopped nuts for added richness.
