A tropical dish featuring succulent pork marinated in ginger and lime, served with creamy coconut rice.

- 1 lb pork tenderloin
- 2 tablespoons fresh ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 tablespoon vegetable oil
- 2 cups cooked coconut rice
- Salt and pepper to taste
- Slices of lime for garnish
- Chopped cilantro for garnish
Instructions
- In a mixing bowl, combine minced ginger, soy sauce, lime juice, and honey. Stir well.
- Season the pork tenderloin with salt and pepper and marinate it in the ginger-lime mixture for at least 15 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Sear the marinated pork for 7-10 minutes on each side until cooked through.
- Transfer the pork to a cutting board and let it rest for a few minutes, then slice it into medallions.
- Serve the pork on a bed of coconut rice, garnished with lime slices and chopped cilantro.
Notes
For a spicier version, add sliced chili peppers to the marinade. Consider adding vegetables like bell peppers for extra crunch.
