Description

A tropical dish featuring succulent pork marinated in ginger and lime, served with creamy coconut rice.


Ingredients

  • 1 lb pork tenderloin
  • 2 tablespoons fresh ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 2 cups cooked coconut rice
  • Salt and pepper to taste
  • Slices of lime for garnish
  • Chopped cilantro for garnish


Instructions

  1. In a mixing bowl, combine minced ginger, soy sauce, lime juice, and honey. Stir well.
  2. Season the pork tenderloin with salt and pepper and marinate it in the ginger-lime mixture for at least 15 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat. Sear the marinated pork for 7-10 minutes on each side until cooked through.
  4. Transfer the pork to a cutting board and let it rest for a few minutes, then slice it into medallions.
  5. Serve the pork on a bed of coconut rice, garnished with lime slices and chopped cilantro.

Notes

For a spicier version, add sliced chili peppers to the marinade. Consider adding vegetables like bell peppers for extra crunch.
