- 1 cup sharp white cheddar cheese, grated
- 12 oz elbow macaroni
- Optional: French bread or baguette slices for toasting

Instructions
- Melt the butter in a large skillet over low heat and add the sliced onions, caramelizing them over 30 to 40 minutes.
- Once browned, sprinkle flour over the onions and stir to coat, then gradually whisk in beef or vegetable broth and half-and-half.
- Add thyme and garlic, folding in Gruyère and sharp white cheddar cheeses until melted and smooth.
- Cook elbow macaroni according to package instructions, then drain, reserving a splash of pasta water.
- Combine cooked macaroni with cheese sauce, stirring until well coated.
- Transfer to an oven-safe dish, top with optional baguette slices and extra cheese, then broil until bubbly and golden.
