Description
A comforting twist on the classic French dip sandwich, these tortilla roll ups are filled with tender roast beef, provolone cheese, and crispy French fried onions.

- 4 large flour tortillas, about 12 inches in diameter
- 8 slices provolone cheese, thinly sliced
- 12 ounces deli roast beef, freshly sliced
- 1 cup French fried onions, store-bought or homemade
- 2 tablespoons extra virgin olive oil
- 1 can (10.5 ounces) beef consommé
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 2 teaspoons low sodium soy sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.
- Lay one tortilla flat and place two slices of provolone cheese over one half, followed by 3 ounces of roast beef and a handful of French fried onions.
- Brush the inside edges with olive oil, roll tightly from the filled end, and press to seal.
- Place seam-side down on the baking sheet and repeat with remaining tortillas.
- Brush the tops and sides with olive oil and bake for 8-10 minutes, rotating halfway through.
- In a small saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Simmer for 3-4 minutes while the roll ups bake.
- Allow roll ups to rest for 2 minutes before slicing into halves or thirds.
- Serve warm with au jus for dipping.
Notes
For a vegetarian option, consider using sautéed mushrooms instead of roast beef. Feel free to customize with seasonal ingredients or different sauces for dipping.
