- 1 cup ricotta cheese
- 1 cup flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup sugar
- 2 large eggs
- 1/2 cup milk
- Zest of 1 orange
- 1 cup fresh or frozen cranberries
- Butter or oil for cooking
Instructions
- In a large bowl, combine ricotta cheese, eggs, milk, and orange zest. Mix until smooth.
- In another bowl, whisk together flour, baking powder, salt, and sugar.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in cranberries.
- Heat a non-stick skillet over medium heat and add butter or oil.
- Pour batter onto the skillet to form pancakes. Cook for 2-3 minutes on each side, until golden brown.
- Serve warm with syrup, extra cranberries, or orange slices.
Notes
Use fresh cranberries for the best flavor and don’t overmix the batter for fluffy pancakes.
