- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet (1 ounce) taco seasoning or 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon paprika
- ½ cup water or chicken broth
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup frozen corn
- 4 cups cooked rice (brown or white)
- Optional Toppings: Salsa, Avocado slices, Sour cream or Greek yogurt, Shredded cheese, Fresh cilantro, chopped, Lime wedges
Instructions
- Prepare rice according to package directions.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3–5 minutes.
- Add minced garlic and stir for another minute.
- Add ground turkey to the skillet and cook for 5–7 minutes, breaking it up as it browns.
- Drain excess grease if necessary. Add taco seasoning (or spice mix) and pour in the water or chicken broth. Simmer for 2–3 minutes.
- Fold in black beans and corn, cooking for another 3–5 minutes until heated through.
- Assemble bowls by placing rice at the bottom, topped with turkey mixture, and garnish with toppings of choice.
